What are capuchin peas?
Capuchin peas are legumes from the butterfly flower family and are closely related to the pea. They are climbing plants that can grow up to two meters tall. The beans are large, firm and vary from round to oval.
Capuchin peas are also known by various names, such as field peas, pale peas, grey peas and gray peas. Fresh capuchin peas have a grey-green color, while the dried variety is brown.
Preparation
Capuchin peas are easy to prepare. The new harvest does not need to be soaked, but it is recommended for older beans.
- Rinse capuchin peas thoroughly with cold water
- Place in a pot with three times the amount of water and soak for 8 to 12 hours at room temperature
- Drain soaking water and boil capuchin peas in plenty of water for 60 to 75 minutes
Storage
Dried capuchin peas have a long shelf life. Store in a cool, dry and dark place, and they will stay good for up to a year. This way you always have a nutritious and tasty ingredient on hand.
