What are black beans
Black beans, also known as black turtle beans, are commonly used in South American cuisine. They are similar in preparation to brown beans but are slightly smaller and have a deep black color.
The beans have a firm, almost meat-like consistency with a mild, earthy taste reminiscent of mushrooms. This makes black beans particularly suitable as a meat substitute in vegetarian and vegan dishes.
Preparation
With black beans from a new harvest, soaking is usually not necessary. If the beans are a bit older, it is advisable to soak them beforehand. Ideally, start preparation the evening before cooking.
- Rinse beans thoroughly with cold water
- Place in a large pot and add three times the amount of water
- Soak at room temperature for at least twelve hours
- Use the soaking water as cooking water for extra flavor
- Cook beans for sixty to ninety minutes until done
Storage
Dried black beans have a long shelf life. Store in a well-sealed jar or bag in a cool, dry, and dark place. They will remain good for up to a year. After this time, the skins may become a bit harder. The beans are then still perfectly usable but require a longer soaking and cooking time.
