What are Grey Peas?
Grey peas, also known as field peas or faded peas, belong to the legume family and are closely related to Capuchin peas. They have a grey-green to brown color and a full, earthy flavor. After cooking, they achieve a creamy consistency with a firm bite.
This ancient Dutch pea used to be a common ingredient in traditional regional dishes but is now regaining popularity due to its nutritious properties. Grey peas are rich in fiber, plant-based proteins, and minerals, making them an excellent meat substitute.
Preparation
Grey peas are easy to prepare but require some pre-preparation.
- Rinse peas thoroughly with cold water
- Place in a large pot and add three times the amount of water
- Soak peas for 8 to 12 hours at room temperature
- Use the soaking water as cooking water for extra flavor
- Cook peas for 60 to 75 minutes until tender
They taste delicious in hearty dishes like mashed potatoes or the old-fashioned Capuchin pea dish with bacon and gherkins.
Storage
Dried grey peas have a long shelf life. Store them in a tightly sealed jar or bag in a cool, dry, and dark place. This way, they will remain good for up to a year and retain their taste and nutritional value.
