What are Lima Beans
Lima beans, also known as butter beans or elephant beans, are large, creamy white beans from South America. Their nickname "elephant beans" refers to their impressive size: they can grow up to two centimeters. The beans are oval, slightly flattened, and have a creamy color.
Lima beans are known for their soft, buttery texture and mild, creamy flavor. Thanks to their versatility, they pair well with both warm and cold dishes.
Preparation
Although lima beans cook a bit faster than some other beans, proper preparation is important for the best taste and texture.
- Rinse beans thoroughly with cold water
- Place in a large pot and add three times the amount of water
- Soak beans for at least eight hours at room temperature
- Use the soaking water as flavorful cooking water
- Cook lima beans until tender in about 90 minutes
Lima beans taste delicious in salads, soups, or as a nutritious base for a baked dish.
Storage
Dried lima beans will keep for up to a year if stored in a cool, dry, dark, and airtight place. Cooked lima beans can be stored in the refrigerator for up to two days or frozen for up to three months.
